Lemon ricotta ravioli

Something we don’t do too often, but probably should, is make our own ravioli. The first time we tried was a bit of a disaster but tonight’s attempt was far more successful.

Pasta recipe:
2 eggs
200g pasta flour

Method:
Add ingredients to food processor and mix. Break mix into manageable pieces and put through pasta maker to make sheets. There are lots of pasta recipes out there but this formula has never failed. We use large free range eggs but if it’s a bit wet, just add a little more flour.

Filling recipe:
250g ricotta
Juice and rind of one lemon
Chopped basil and thyme

Method:
Mix ingredients in a bowl

Ravioli method:
Use ravioli maker to add filling to pasta sheets. If you don’t have a ravioli maker, I have no idea how to do this but there is probably something on the world wide web. They have lots of information on there.

Cook for 3-4 minutes in boiling water and serve with olive oil and a grating of Parmesan. A bit of a faff but you can’t beat fresh pasta.
