Quick and Simple Pancakes

This is one of our go to recipes which we use at least once a month. It is from the cook book that first got Liz interested in cooking (Help, My Apartment has a Kitchen) and therefore is in American style. If you are going to follow our recipes, you will have to invest in some cup measures as we use a mixture of cups and weights.

Recipe:
1 Cup plain flour
1 Tablespoon sugar
1 Teaspoon baking powder
1/2 Teaspoon salt
1 Cup milk
1 Large egg
2 Tablespoons butter (melted)

Method:
Add all dry ingredients to bowl and whisk ( we very rarely seive and whisking works just as well). Add the milk and whisk until smooth. Add the egg and butter and whisk again until batter is formed. I find by whisking with the milk first and not adding the egg at that stage, the batter is smoother. Cook in a frying pan with very little oil (the butter in the mix means this has never stuck…yet).

This will serve 2 hungry people or 4 normal healthy people (who might or might not be on a diet). This whole process takes about 30 minutes for the whole batch. Tasty, simple and half-assed. A great weekend breakfast.
