Garlic soup

What more is there to say? There is garlic. There is soup. What’s not to like? Simple, delicious and make sure you don’t have important meetings tomorrow.

Recipe:
6 tbsp olive oil
6 cloves or more garlic, chopped (we always do more)
6 slices or 300g of bread, cut into cubes
1 tsp paprika
1 3/4 chicken stock
2 tsp salt
4 eggs
Parsley, chopped

Method:
Heat oil in soup pot or casserole dish, add the chopped garlic and bread cubes
Fry until lightly brown and add the paprika.
Immediately add the boiling stock and salt. (Having made this twice now, it is quite salty so be careful and check if it needs salt). Cover and simmer for 5-10 mins.
The bread should almost dissolve in the broth.
Place the soup in 4 individual bowls. Add one egg per bowl.
Poach the eggs in the soup in the oven for approx 10 mins at 180C.
Garnish with fresh chopped parley and serve.

Bosch hand blender (for blending when the bread doesn’t dissolve)
