Summer Halloumi Salad

This recipe is very easy and very flexible. To be honest, we just made the whole thing up so you can add whatever you like. This is what we did.

Salad recipe:
Bag of salad (we cheat, it’s easier)
Blueberries
Packet of halloumi
One avocado (diced)
Two tomatoes (chopped)

Dressing recipe:
3 tbsp Greek yoghurt
Juice of half a lemon
Fresh mint (chopped)
Liz wanted to add some Cholula (Feel free but Steve wasn’t so keen)
Salt and pepper

Method:
Cut the halloumi into smallish chunks and dry fry until golden on all sides. Add all the ingredients to a big bowl and mix.

For the dressing, add all the ingredients to a little bowl and stir.

To serve, add a big scoop of everything in the big bowl to a medium sized bowl and drizzle with the contents of the small bowl. Confused? It looks like this.
