Matzo balls (for the soup)

OK,  I blame running late and having to drive to the airport to pick Liz up but I completely forgot to post the recipe for the matzo balls.  Here you go.

Recipe:

2 Large Eggs

1/2 Cup Matzo meal (we have trouble finding it at Tesco but it is available in some shops if you look hard enough)

2 tbsp Olive oil

1 tsp Salt

1/4 tsp Pepper

2 tbsp Fizzy water (can use stock but fizzy water makes them fluffier)

Method:

Lightly whisk eggs.  Add the rest of the ingredients and mix.  Wet your hands (this is very important).  Make a ball approx 1 inch diameter and add to the simmering soup.  Continue making balls and adding to the soup, keeping your hands wet, until the mix is gone.  No pictures.  No porn.  Definitely no porn pictures.  Enjoy.
