Marinated Pork Fillet Roasted on Rhubarb

Another Jamie Oliver recipe. Another very simple, tasty dinner. I promise I’m not saying Jamie is simple.

2 pork fillets
Large handful sage
2 cloves garlic
Salt and pepper
10 slices prosciutto or Parma ham
12 sticks rhubarb (ours was frozen but would be better fresh)
5 tbsp olive oil + some to drizzle

Bash up half the sage and the garlic in a pestle and mortar. Add olive oil, then rub over pork fillets and marinate if time allows.

Preheat oven to 220’C/425’F/gas 7. Season pork and drape 5 slices of prosciutto over each. Any excess marinade can be added. Cut rhubarb and place on baking tray (not aluminium/aluminum as it reacts with the rhubarb). Place pork on top of rhubarb. Sprinkle over the rest of the sage and drizzle with more oil.

Take a piece of greaseproof paper, wet it and scrunch it up. Lay over the meat and tuck in the sides. Cook for 15 mins in the oven. Remove the paper and cook for another 15 mins. Remove and allow to rest for 5 mins. Cut and serve with the juices from the tray.
