Boxing Day Breakfast

This is a very simple variation on a well loved favourite. We have to give a big shout out to Steve’s brother and sister in law, Chris and Lolly, who, having been kind enough to host and cook our dinner yesterday, were also very generous in giving us some leftovers.

Recipe:
Ham (roughly chopped)
Eggs
Onion (finely chopped)
Garlic (finely chopped)
Chilli (finely chopped)
Salt and pepper
Olive oil

Method:
Heat a little oil in a non stick pan. Add onions, garlic and chilli and heat gently until soft. Add the ham and warm through. Add the eggs, salt and pepper, turn up the heat a little and whisk until the eggs are cooked and it all comes together. Whisking keeps the eggs light. Serve on toast spread with butter or on its own.

Silicone whisk (to protect new pan)
