Cheese on Toast

When there’s snow lying outside and you’re treasuring your home comforts, lunch has to be hot and tasty. Cheese on toast always hits the mark.

Mature cheddar cheese
Pickled onions (finely chopped)
Black pepper
Worcestershire sauce

Grill one side of the bread and then remove from grill. On the uncooked side, spread mustard instead of butter. Be generous – it goes really well with the mature cheese and is not as spicy when heated. Put the pickled onions on top and spread them out evenly. Cover with slices of cheese. Grind black pepper over the top and finish with a few drops of Worcestershire sauce. Place back under the grill until the cheese bubbles and starts to go brown. Serve with baked beans (or a poached egg).
